Specify SMTP host in Mail() function

I am looking to specify who the host is in the mail function. how can i add this to the headers. I DO NOT want to use another program like phpmailer. i know there is a way to do this, i'm just not sure what the actual way of doing it is.

Definitions like that are set through the php.ini and are only valid for Windows installs.
