I'm attempting to find (in this example) "DC 1" and replace it with the same thing except that instead of a space I want a non-breaking space. Yet when I type the non-breaking space character (Control-Shift-x) the character is typed into the frame rather than the Replace text box. How can I perform this kind of find/replace?

Don't use the shortcut. To the right of the CHANGE TO box there is a right pointing arrow. Click that and you will find non-breaking space in that drop down list.
