Some feedback on a site SE set up

I posted a while back that I was working on a website that uses the location bar url to provide context of what page was being viewed... and I am now getting close to launch.

I've built a CMS to allow the client to alter (on a page by page basis) the following areas (amongst many others):
- the window title
- the page h1 title
- the meta description
- the meta keywords

I wanted to "run it past you guys" and get your feedback (since I can just edit the entries using the CMS) on what you would do next. Basically I have focussed on semantically correct markup and accessability as the mantras for SEO in this example.

The site copy is still being delivered (most pages have the final copy, however) and they are yet to finalise the pricing for the items (and in some cases to provide final descriptions for their products).

I'm interested in which of the 4 items listed above would be worth customising (or rank in which order you would recommend customising) - and some suggestion of a word count or something so that I don't end up "stuffing" words.

This site is probably a week or so from launch... and it will be interesting watching them grow from a true "mom and pop" franchise into something bigger (so we all hope). The market is niche at least!

only the page title and (possibly) page headings are of any real value to SEO.
I've tested pages with <h1>s and without and sometimes they help,sometimes they seem to hinder and sometimes it appears to make no difference at all.
SEO isn't something that can be broken down into neat little formulas, each site, each subject and often each page may need small changes here and there.

meta keywords, typing it into this post is already too much time used considering them, use them for mis-spelling etc for Yahoo, neither MSN or Google use them for SERP ranking.

meta description content will get used as the text snippet in the SERPs by all the major SEs, Yahoo and MSN by default and by Google IF some of the text matches the search phrase used. So while not a ranking consideration, it should certainly be considered an important factor for clickthroughs and conversions.
