How can I start/stop SMTP on a linux server?

To start it, run as the root user:

sendmail -bd

To stop it, run:

pkill sendmail

This should work on most distributions.

It depends on smtp server you've installed. Most probably it is sendmail; so you can try '/etc/init.d/sendmail start' and watch console, /var/log/messages nad /var/log/maillog files.
