Where can I find information to create a bare minimum kernel with various needed functionality..

Such as how to compile and test etc..

Why don't you look at the small distros like bbc (bootable business card) ?

The reason is I'm trying to build one specific to the applications I want to support and specific I/O peripherals required.

I know Knoppix is small. But I want to create a one off kernel for a specific application. It may be installed on a flash disk..

I wasn't suggesting knoppix. Knoppix is not small. In fact the latest version is 3.5 gigs.
I suggested BOOTABLE BUSINESS CARD cos it's designed for the whole linux system (including kernel) to fit on a Business Card sized cd (35 or 50 megs). That should fit on your flash disk.
