How long does it take to backup a MAS system with message storage server?

The MAS is automatically setup to send backup information to the MSS nightly. You can look at it on the MAS in Scheduled Tasks

does it backup ALL Data, (voice recordings, caller ap records, messages, ect)?

The MAS doesn't store any messages (unless it happens to be marked as an offline store in multiple MAS's) they are all on the MSS. The caller ap recordings will be on the MSS as well if they are recorded as Annoucements. I believe the backup has the C:\Avaya Modular Messaging folder selected which should include the reset of the data.
