sip NOT with cme - Can someone point me in the right direction?

Are there any tutorials for SIP trunks that are NOT combined with CME?

I am new to the router world. So far I have downloaded GNS3 and have been able to do basic configs. My future goal is to setup CUCM7 (not Express). However, I am trying to learn everything piece by piece. My next step is to create a SIP trunk between to gateways. Then, I will add in authentication so I can connect to an external SIP provider. I just cannot find any tutuorials other than SIP on CME.

If you have any ideas please let me know. - Thanks!
