Single rank vs Dual rank

I am amazed at how difficult it has been to find a basic comparison between single ranked and dual ranked memory. I am trying to spec out a new server and want to make sure I make the right decision on the memory.
I know that single ranked has chips on one side of the stick and dual ranked has chips on both sides, but so what?

Can anyone tell me the difference between the two in terms of functionality?

Thanks, I've seen that, but it just describes the physical differences. I need to know which is faster, better for a given situation, etc.
