Will an Athlon 2000MP processor (Socket A 462)work in a single processor motherboard? My Gigabyte GA-7DPXDW dual processor motherboard died and I don't want to spend the money to replace it; however, single-processor socket A motherboards are less expensive.

I am pretty sure MP's were verified to work in pairs but are absolutely fine one their own as well.
There doesn't appear to be many new socket 462's (A) available, a couple of SIS based PCchips boards and the Asrock K7S41 all in one.
The best chipsets were abviously the latest:
Either Nforce2 (Nvidia) or Via's KT600, KT400 was also a good option but slightly older.
