Should I be using exchange server?

Hi all!
I've been using exchange server spasmodically alongside outlook and am trying to evaluate whether it is the correct tool for my growing business. A few questions I'd love answers to are therefore as follows.
I regularly need to attach multiple files to emails, and to attach say 10 files seems to take forever as each one has to be found individually then confirmed it takes too many clicks! Is there a way round this.
I'm also struggling to get my head around public folders (sorry to be dim!). Where can I find more info on the logic of what they do?
Also I'd like to access server from within a website without exiting from the rest of the site. Is this feasible?

Access server from within a website. WTF? Please clarify.

You have Outlook with a PST file. You have more than 5 staff. You need Exchange. Central collaberation, group contacts, distribution lists, single instance storage, outlook web access, RPC over HTTPs, resilience, mailbox size. I could go on. And do - regularly.
