The existing products we offer are priced with shipping included. I want to add products that will be priced based on UPS rates by zip. In other words, I don't want the "Shipping Included" (fixed rate=$0.00) option in the drop down. Is this possible? Thanks in advance!

You could use the UPS shipping module which will connect to UPS and determine the shipping costs by weight.
