Is it possible to use windows server 2003 to host applications. For example can I install programs like microsoft word on the server and be able to access them from the other workstations on the network.

I think it depends on the license agreements, I also would think it would require a large amount of bandwith?
 
The answer is no. Microsoft Office (and Word) is licensed on a per user basis.

But Windows 2003 Server is a server O/S so by nature, it's meant to "host applications", among other things it can do.
