Sharepoint Server Build--Specs?

Hello, I'm looking for suggestions on building a new Sharepoint site for our company. We're looking to use it to host our Intranet. We have about 250 users and expect at most about 200 sites/subsites. The only server config documents I've seen are related to huge sites serving thousands of pages to thousands of users. My current thinking is a 6 disk box, 2 mirrored for OS, 2 mirrored for trans logs, 2 mirrored for SQL DB. All tips appreciated.
 
We user Sharepoint in an environment with about 400 employess, of which about 250 or so are using the site right now. Our biggest portal to date is 135 users that use it as a doc repo. There are about 2GB worth of docs stored there...so sounds like we may have similar environments.

Our setup is 2 servers, (beefed up HP's built to spec from the Microsoft deployment white paper) and they are working fine. One is a DB server and one is a Web/Indexing server.

So, that is our story...Not sure if you could muster up enough funds to get the second server, but I would suggest it if you could.
