Hi all I want to install sharepoint onto multiple servers for redundancy so if one server goes offline then the users can keep on accessing the sharepoint site as if nothing has happened.

What is the best method of achieving this?

In theory, there is no difference between theory and practice. But, in practice, there is.

I have in the past set up SharePoint on a mirrored cluster and used sql aliases for the database to account for switching the database over. There is still some manual steps, but that was my requirement.

If I remember correctly, there are some sites if you search google which talk about a more automated approach.
