Sharepoint 2007 problems after service packs

We had a site collection running more or less ok, on old hardware, and we decided it was time to install service packs for MOSS and WSS so that the site could be migrated to 2010. This is where the problems started, just getting the updates installed took a lot of troubleshooting with service accounts, sql permissions etc. Now we get constant issues with clients connecting to the site; weird formatting on the page, script errors in the browser, login prompts, and errors opening documents. Sometimes these problems seem to go away for the day after a reboot or iisreset, and we are flailing away trying to find the magic settings in IIS, Central Administration, and SQL server (2005) to get everything working normally. Our sharepoint server, SP-MON, seems fine if we browse it locally on the server, but if we access it using its alias ( from a client, the errors abound. It is also inaccessible from a client using (authentication prompts), which wasn't always the case.
This is a single server farm, currently using spadmin account (local administrator, db_owner on dbs) to run most services.
