SharePoint 2003 + MOSS = Workflow (???)

Do I need MOSS for any workflow to work? With MOSS, there are some standard workflows (ex. approval), there is only one stardard workflow with SharePoint 2003! Does anyone know where I can get some simple directions on how to create an approval workflow (using visual or designer)? After creating the workflow, will it work without the SharePoint Server?

MOSS2007 gives you 4 OOTB workflows which seems to work in the majority of cases. If you want to anything clever you'll need SharePoint Designer 2007 which has a pretty good wizard for designing new workflow packages.
