You would need a motherboard (or PCI card) that supports this functionality, unless of course you went down the route of software RAID which is no where near as good and reliable.

RAID cards usually aren't cheap. A quick eBay search revealed these:
Average price around $200+ for a decent one.
Are you talking about hot-swapping IDE drives? Not sure that's possible or desireable.
