Setting up Access 2007 options with a vbscript?

Is it possible to set up Access 2007 options using a vbscript? There are 14 MS Access database applications, plus about 70 read-only databases (SQL backend) for querying that need to have options set on them that are in Access 2003 (some may be Access 2000 format) that aren't set in 2007. I would need to do things like -

Set the default file format to Access 2002-2003.
Uncheck Layout view, Design changes, etc. (basically, the entire 2007 ribbon).
Enable macros and VBA code.
