I got this from the postfix site
and

Transport table lookups are disabled by default. To enable, edit the transport_maps parameter in the main.cf file and specify one or more lookup tables, separated by whitespace or commas. For example:

transport_maps = hash:/etc/postfix/transport

Update your transport file as described below and then run the postmap command against it.

postmap /etc/postfix/transport

In order to deliver internal mail directly, while using a mail relay for all other mail, specify a null entry for internal destinations (do not change the delivery transport or the nexthop information) and specify a wildcard for all other destinations.

my.domain :
.my.domain :
* smtp:eek:utbound-relay.my.domain

I have not verified that this works, but the documentation is there. Hope this helps.
