Can someone exlain why the Exchange Site Services Account should not be the NT administrators account ???

You use an Exchange Services account to start the services for Exchange (double click on each Exchange service in services and see the username).

Administrator account is for administering the NT box and the password for this should change regularly. If you use this for Exchange and change it, you also have to change the password in every service that uses it.

But what if the server reboots in my absence will I need to be there to enter the Exchange services account password?

Nope. That is why you embed it in the services details. Trust me - it works fine.
