Server Migration questions

We have been talking about replacing the current server with a newer model. I have looked into what all needs to be done (joining new server to domain, copying backup file to it, transferring FSMO roles, etc). I just have a couple basic questions regarding this

1. After migrating everything and transferring roles, etc...will the old server still be able to be used? (I want to take the new server off-site and setup to test to make sure everything works as it should and will still need the old server to do it's job until the new one replaces it)

2. We have employees that are not at the physical location of the server. The laptops they use were originally connected to the domain during their initial setup so it could cache whatever domain information was necessary. Will they have any issues connecting to the new server? They won't be readily available to just pop in the office in case something on their laptops need adjusted (They connect in through a VPN connection to access e-mail through Outlook/Exchange)

1. You can't take the new server offsite to setup and test if you expect it to be part of the existing domain. It needs to be connected to the existing domain to be a domain controller for it.

2. If everything is done correctly (see my FAQ above), then it should be seamless for the users.
