I have two questions. 1) Does the sendmail daemon need to be running in order to send email out from the server? For security reasons, I do not want the daemon running or listening on port 25. 2) If the daemon needs to be running to send email, is there a way to disable it from responding to incoming requests?

No. The sendmail daemon does not have to be running to send mail.

-bd listens for connections. You could run the sendmail daemon but without -bd, if you wanted to.
