sending and receiving for a different domain

We have an external user that would like to use our Exchange 2000 server to send and receive email for a different domain. For example, he wants to send and receive using a @abccompany.com address instead of our normal @xyzcompany.com. Can this be done for just one user in Exchange? I guess the other problem I foresee is that even if this does work, is there a way to hide the server and domain name from the email header? He basically wants to hide the fact that he is affiliated with our company in any way.
