Sender Alias

I have an IMAP connection with my server. The server allows me to use several "aliases" when sending mail. A reply addressed to an alias will be automatically displayed under my regular name and address. This is useful when providing an address which may result in spam.
How do I set my preferences so that an outgoing e-mail may "appear" to emanate from an alias rather than my regular address?
I am using v. 6.2.1 (Mac).
