Selecting group and leaving out a name

I would like to send an e-mail to a group but leave one person's name in the group out. Is there an easy way to do this? Thanks.
 
There is no easy way to exclude a person's name from a group. If that person belongs to the group, he/she should be entitled to receiving the mail (assuming professional content, of course).
What you can do is write your mail, put the group name in the Send To, and use F9 to refresh your memo. That should provoke a recalculation and insert the names of the group list instead of the group name. If that works, you can then edit the list and remove the one name.
If that does not work, you can still open the server Name & Address book to the Groups view, open the group you wish to use, and copy the list to your SendTo field. Then you can edit the list as I mentioned above.
Finally, you can create a new group in your personal NAB. The issue with that is that it is impossible to synchronise the content with the server version, you'll have to do it manually. And, you cannot give it the same name, or your personal version will overwrite the server version when you send mail.
