Need to set up a socket for transferinng a data stream from my network to another network across the internet. The remote IT person and I have agreed on a random port, but how can I secure this transfer? The use of sockets for transferring data is new to me.

I would consider a VPN for that, it's exactly what they are designed for. Your existing gateway may well already have VPN functionality.

Carlsberg don't run I.T departments, but if they did they'd probably be more fun.

There are other alternatives.... anyone else have any input?

You might want to try creating a ssl tunnel between the two networks.
