Secure Exchange 2003

I am super busy and don't have a lot of time to do research. Can anyone point me to quick article or white paper on how to secure exchange from an open relay external and internal. I only want users to be able to send mail via Outlook "as far as exchange is concerned".

I know I need to be in the virtual smtp connector but I am just slightly uncertain about the auth settings, etc.

I will not be using POP or IMAP at all.

Exchange is, by default, setup to not relay.

And in order for Outlook to send, a user needs to open it with their profile. Which means they have to have an account in order to open Outlook and send mail.
