Secure Access to Exchange

I would like to ask a little question,
you know when you try to configure outlook, and you write the name of the exchange computer to access the server? how can you disable this, as means of security?
What are other security policies that i can apply? I installed exchange, but do not know what to do with its security??? any suggestions?

Why would you want to disable writing the name of the server?
