search for contacts in EMS?

We would like to run a query against all of our Exchange 2007 mailboxes to find personal contacts that are in a certain category. Users create new contacts and put them in a specific category and once a month we(sys admins) go through and pull those contacts into a speardsheet for use in a monthly mailing. would it be possible to do a query on all mailboxes and filter out those contacts based on the category, and then dump it into a txt or .xls file? Thanks for any help you can provide.
 
I'm thinking you're probably looking at using Exchange Web Services to do that, since you'll be looking into each mailbox. Not sure how to do it myself, but I'm fairly positive it will require EWS.
