the everyone group is greyed out in the Info Administrator
and cannot be removed from user properties. Can this be done? I don't want some users to be part of the Everyone group.

Jo,

It isn't possible to remove the default Everyone Group. The only thing you can do if you don't want users to have inherited 'Everyone' rights when they're created, is to 'Clear All' privileges from the User Group Properties window of the Everyone group, perhaps renaming the group if you don't want it to appear as Everyone.
