Within active directory I can look at the properties of a user. I can see the tabs such as "General, address, account etc etc" Can I create an additional tab called "User type" with various fields in it eg(Contractor, permanent,...)

I have tried to use adsi edit to change the schema but I'm not sure this is the correct way.

Any advice is greatly appreciated

You would have to use adsiedit to do this, BUT I would not do it if I were you. It is VERY dangerous to edit the schema. I have added some custom right-click menu stuff, but thats as far as I am willing to go.

Although this site does not address your question, this website is a good learning tool for AD as well as many other things. You may find it helpful.
