SBS 2003/Outlook 2003 Contacts

I have a couple of questions about contacts in Outlook 2003.
I have recently installed SBS 2003 and have deployed Outlook 2003 to workstaions that are running XP Pro.
The questions are,

1)
I imported the old contacts into the system created public contacts folder(via a Mailbox Contacts folder) using a workstation.
The users wish for the names to be displayed in both the public contacts folder and address book as Last name, First name.
After the import both the public contacts folder and address book were displaying First name, Last name. I found that under Tools, Options Contacts Contact Options, that the Default Full name and Default display name were both set to First name, Last name. So I changed these to both be last, first name.
The public contacts folder now displayed as wanted but address book still wrong. So I deleted the contacts and re-imported. Both public contacts folder and address book display as required. BUT when you add a new contact as Last name, First name it appears in the address book as first anme last name. So to get it to work you would have to put the first name as the last name and visa versa. I assume I muts have missedsomething really simple or is it an Outlook'ism?

I have set all workstations to use the public contacts folder as default (Address booke Tools,Options) and this is no problem. When an email arrives from a new contact and the user opens it, right clicks on the name and selects add to contacts, it is always added to the contacts folder in the users mailbox and not to the public folder. Is there away around this?

Sorry for the long epistle but any help would be appreciated.
