SBS 2003 Exchange Virus Scan registry setting

On our server everytime it is restarted, the Virus Scan registry setting "Enabled" keeps reverting to 1. That causes our Exchange service to not start. I have to keep changing it to 0 to start the service. I have read that the Exchange directory has to be excluded from being scanned. I think I entered the location into the right section but am not 100% sure. I currently have the directory exclusion under:

Sophos Control Center > Configure Scanning > Extensions and Exclusions > Windows Exclusions.

I'm not sure if that is how it should be set, but the problem still exists and we keep having to disable the registry entry and restart the service to get Exchange to run properly after a restart.
