Saving all email

We are running Exchange server 5.5 nd do a daily back-up to tape. Problem is that if the user recieves the email and deletes it before the back-up runs it is lost.
I was wondering if there was a way to configure Exchange to save all emails in and out before they can be deleted by the user. I want to do this so theree is no intervention by the user.

Any help will be greatly appreciated,

Users are probably deleting for organizational purposes so I don't think you want to remove thier ability to delete messages. As far as recoving a message that a user has deleted you first would have to go into ExAdmin and go to the server(s) that you want to apply this option to. Then in the right side column you'll see Private Information Store, check the properties on this. The general tab should tell you how many days Ex is holding onto deleted items.

I have to look in technet to remeber where the option to recover a message within that time frame is. But this is the setup.

You set the retention at the spot mentioned by Mantislee. After a user deletes a message from their Trash, it holds it (unseen by the user) for the amount of time you set on the server. If the user wants it back, they just click their trash, click tools, Recover Deleted Items and it provides a list of recoverable "deleted items".
Just remember that anything kept in the Recover Deleted Items also counts against your Priv.edb.
