I need to be able to same the same data out of different ports on a switch. I know this can be done using port mirroring but my question is is it possible to do this if the two ports where on different switches?

You can use RSPAN between switches:
The implementation of RSPAN between different switch families varies slightly, however the concept is the same. The link above is for Catalyst 3550's.
