You want the guest VM to have a minimum of 8gb, so if the host has 8gb, you could probably only give 6gb to the SBS vm. If this is a test environment or for two users, you could get by, but performance is still going to be so-so. If you have more users, mobile phones, anti-virus, etc, you are going to want to have something like 12gb in the guest VM and probably 16gb installed on the host server.
Thanks ShackDaddy, it's just for me to tinker me. I bought a new laptop with 8Gb of RAM and found out SBS 2011 uses 8Gb minimum. The new box will have 32Gb.
