Rundown of Outlook and Exchange

Can someone give me a quick rundown of Outlook and an Exchange Server? At my last job I seem to remember a tree in Outlook 2003 called "Offline Folders." I could then make folders under this. It was my understanding that things were stored on the exchange server until I moved them "offline." Is this true and if so how do I make this offline tree?

Futhermore, I clicked "Work Offline" in Outlook and now everytime I open it asks if I want to work Offline. Not a big deal, but I would prefer not to have to do this. Can someone help me out with this?

If you are the admin you can enable this through Exchange server managenent or ask your admin about it
