Routing File Transfer Traffic

We have a group of about 6 servers that transfer large amounts of data between each other. Each server houses specific apps that "Massage" the data then the results are passed on to the next server. In an attempt to alleviate contention on the front end switch, we installed a 24pt Cisco 3750G and using aggregated links we connected all of these server to this switch on a separate network. As of now the only way we've been able to take advantage of this "Storage Network" is to map or address the other server by IP address. Is there a way to route traffic in Windows Server 2003 based on traffic type? For example, in this model everything is moved via Windows Explorer so is there a way to force that traffic through a certain NIC?
