Route Email From a Specific Sender

I have emails being delivered into my exchange server from a particular sender. Sometimes the recipient address that they send to changes. I would like all emails from one particular send to go to a designated email address. Anyone know how to do this?
 
The only way I can think of doing this is approaching the situation as if you were going to set up journaling for archiving purposes and change the rule to only affect that single sender address. For that, read the following:


The problem remains that the email will still go to the intended recipient, but at least you could get a copy of it.
