Just wondering if you can perform a root disk restore from QUI? "When doing the restore through the gui and you highlight / it highlights everything below it. That is why when performing a root restore we must use command line, / is an option and / only, nothing else below it." Has anyone every done a root disk restore from the qui??

yes. It's fairly simple.
mount an empty disk as /root
restore / to /root
select "restore directories without crossing mount points"
swap the mountpoints between / and /root
reboot
