Roaming Profiles and Server Moves

We recently built a new server for our organization upgrading from Server 2003 to Server 2008. In addtion we also changed the name of our internal domain. We had roaming profiles set up so I tried something clever (or maybe stupid) and simply moved the old profiles (Files) over to the new server. after setting up all the appropriate user names and so on. The thing is that these profiles did work, but only if the user is part of the administrator's group. once the user is demoted to a standard user they don't work. They load but none of the settings get applied properly. This seems to indicate a permissions problem, but I can't find any files that have permissions that dont'work, and I have gone through and made sure that the permissions were applied to all files and folders throughout the entire file. I was hoping to find our if there is a way to make this go or do I have to just trash these old profiles and start over?
