Reset Aloha System for new install?

This is my first post on Tek-Tips, so be gentle...
A customer came across an older Aloha system (version 5.2) which was previously in use at another restaurant: 1 server and 4 touch-screen terminals, with all documentation and install CDs included. He would like to install this system to replace his current (very old) POS system.

The terminals are Posiflex / Jiva Windows 98 SE, 900MHz with 128MB RAM. The terminals are pretty clean, and they seem to be in fine shape.
The server is a 2.8GHz Windows 2000 Professional custom-built PC with 512MB RAM and 80GB hard drive.
The Aloha version is 5.2.5.154.

I have no problem reading through the user manuals and setting up the menus, submenus and items lists. I have a passing familiarity with Aloha Manager, but I've never set up a system from scratch.

I have a few questions:

1. How would I go about "resetting" this Aloha system so that I can start entering the new restaurant information?
2. What directories and files should I delete from the server? Is this safe to do in the first place?
3. How do I set up a new administrator account in Aloha Manager if I don't know the current Administrator's password (I have to use the CTRL-ALT-X trick every time I log in).

Any help is much appreciated!
