Is there a report, function, log, or feature to track in detail, manager overrides? If so, where can I find it? Any help would be greatly appreciated.

You can build most reports you want in "Transaction Analyzer" Tag the "Authorizing Manager and build the report with the information relevant to you. Save it and run the report through your end of night. (We email these reports out...voids, discounts, etc)
