Replacing non-bootable Kernel in 4.7

I did a kernel compile on my server and the new one comes to the part where it tries to mount the boot partition and hangs. I rebooted and loaded kernel.old and the original kernel came up. Instead of copying it somewhere, I just recompiled the new kernel and rebooted, trashing the kernel.old.

I would like to know how to replace the kernel without doing a full install, if possible. I booted from disk 2 and loaded Fixit, mounted the original / on /oldroot and replaced what I thought was the kernel but it didnt work.

Any help would be appreciated. also is there a way to monitor the kernel and find out why it would not mount my original disk??
