I am about to remove my secondary domain controller (not a GC) from my domain and am a little leery to just do the dcpromo to demote it without understanding the risks.

Will I need to manually delete the secondary DC under Sites and Services? I am unsure if replication will just stop or will it still try and error out? (First time doing this, please excuse the ignorance)

Are you replacing it with another DC? You should, and that should be up and running before removing a DC. Having only one DC is playing with fire.
