I'm trying to set up a remote office using UCXDGH and "M" series phones.
- the remote phone registers
- can dial out
- incoming call rings the phone
but no audio of any type

Have you set up the router on the side of the UCx server to allow media packets from the UCxDG to reach the UCx server? If you use default port numbers on UCx, you need the following port forwarding rules for that:

UDP port 7000 -> UCx system's IP address
UDP port range 10000-13999 -> UCx system's IP address

The first rule allows signaling packets from the gateway to reach UCx. The second rule allows media packets from the gateway to reach UCx.

You must also properly configure the public IP address in the UCx system's configuration. You already used this address in the UCxDG configuration as the address of the UCx server. Enter the same IP address in the Public IP field under PBX - PBX Configuration - Nortel Settings.
If you plan to use remote SIP phones (or SIP trunks), enter the same IP address also in the External IP field under PBX - PBX Configuration - SIP Settings.
