Hi All we are looking at setting up some offices with thin clients to try to speed things up a little.

Is it possible to used remote desktops/terminal services hosted on server 2008 r2 and use thin clients?

Yes. In fact that is one of the primary use cases.

Here is a link to microsoft technet search. As for Thin Clients they only drawback is they won't be on a domain but if it is a basic Thin Client then that is fine.
