If I use Remote Desktop from work to access my home PC (during my lunch break of course):

1. Can my actions on my home PC be traced by the IT department?
2. Can they even see the desktop?
3. Any thoughts on this subject?

I don't think they could see your desktop. I do know that they will see that you are using Remote Desktop and that might not make them too happy. Have you actually tried it yet? If your company has router and such in place then it is possible that you can't even do it at all without them opening up the ports to allow it to pass thru.
