Basically, Remote Desktop allows you to use a computer, as if you were physically in front of it. No other user can see what you are doing as you effectively lock out the machine.
Remote Assistance, lets you see a users desktop, however the user remains logged in, and can see what you are doing, and in turn you can see what they do. You share control of the computer.
