Is there a way to setup a DID for dedicated remote access using the built-in modem?

Yep, renumber the remote access number to the DID number you wish. Such as...system program-->exit or start-->sys renumber-->single-->more-->remote access...you have to first press enter on the old number...then type in the number of the DID.

Does that give you any security? I have done it another way with the Barrier codes as well. It requires a spare analog trunk and spare station to do it this way. I have never just renumbered the remote to a DID so i am curious what type of security is on it that way.

The same. You must assign a barrier code, and assign that code to SPM programming.
